Master Project: Powder shelf-life and functionality, Food physics

Location:

Aarhus N, DK

Dairy powder is an efficient route to deliver nutrition to a growing global population. Overall, this project is one part in a range of activities to enable us to meet consumer demands for powder func-tionality such as solubility and instant properties during increasingly challenged supply chain condi-tions in the future. By building a comprehensive understanding of the effect of storage and how pow-der particle microstructure phenomena (fat migration) affect bulk powder rheological properties in-cluding strength of powder/agglomerates and its relationship with bulk properties. By utilizing a combination of novel measurement techniques we aim to link the learnings from microscale to meso- and bulk phenomena in real powders. Exploring different morphologies, developing quantitative force measurement methods, and low field NMR experiments we will contribute to the advancement of knowledge in this field and enable informed decision-making for various industrial applications.

About the project

We want to develop two methods to access powder quality characteristics related to fat migration and agglomerate strength. When feasible methods have been established these will be applied to un-derstand powder ageing phenomena.

LF-NMR method development accessing Fat migration in dairy powders

• Knowledge sharing and collaboration in external consortium on predicting powder shelf life.

• Time distribution between Arla and university will be according to project needs as infrastructure needed for the project work is distributed both at Arla innovation center and iNANO both in Aar-hus.

• Participate in weekly meetings and academic environment at university.
